2012 St. Patrick's Day Celebration!

The countdown to St. Patrick's Day is on...only 5 days until the big Irish celebration. My guess is that the parties have already started. I, myself, will be celebrating this year with a class party at my daughter's school where we will be introducing Corned Beef and Cabbage to the first grader's so they can learn about food from other cultures. I don't anticipate a huge reception, so we will have other more child friendly foods available.  The Irish celebration will continue with a visit to the St. Patrick's Day Festival in Dublin, Ca Saturday morning and a dinner party with friends on Saturday night.I am excited to make Leprechaun Lime Punch and Rainbow Krispy Squares for the kids.  My slow cooker will come out of hibernation to make the Corned Beef and Cabbage.  Here are the recipes in case you want to create your own St. Patrick's day event.

Slow Cooker Corned Beef and Cabbage (recipe from MarinMommies.com)

Leprechaun Lime Punch (recipe from Pizzazerie.com)

Ingredients5-3/4 cups refrigerated citrus punch2 cans (12 ounces each) frozen limeade concentrate, thawed1/4 cup sugar1/4 cup lime juice1 quart lime sherbert, softened2 liters lemon-lime soda, chilled5 drops green food coloringLime slicesDirections: In a large pitcher or punch bowl, combine the citrus punch, limeade, sugar, lime juice and sherbert; stir until smooth and sugar is dissolved. Add soda and food coloring; stir to mix. Float lime slices on top. Serve and enjoy!Yield: 20-24 servings (1 gallon).

Rainbow Krispy Bars (recipe courtesy of http://blogs.babble.com)

Ingredients2 tablespoons butter1 package mini marshmallows5 cups Fruity Pebbles cerealDirections:  In a large pan, melt the butter with your stove turned to medium heat. Use a wooden spoon to stir the butter Pour the whole bag of marshmallows into the pot and stir them until they are melted and mixed with the butter. Add the cereal into the pot and stir it up until all of the cereal is well mixed. Pour the mixture into a large bread pan which has been sprayed with nonstick cooking spray. Allow bars to cool slightly before serving.If you are in the San Francisco Bay Area, you may want to participate in the St. Patrick's Day Festival in Dublin, Ca (how fitting!).
